This braised lentils dish is deliciously easy, yet it tastes fancy! Perfect as the main dish for a fancy meal or a simple weeknight dinner.

This braised lentil recipe is one that I originally posted on my first blog. (It’s no longer live… I had too many pictures and personal stories about my kids, but it was a vintage blogger.com page!)
The recipe is so SIMPLE and DELICIOUS that we’ve been making it ever since.
The best part about this recipe is that it tastes FANCY. We’ve even served it as the centerpiece for our holiday meals on numerous occasions!

At its core, braised lentils are a hearty one-dish meal. Serve with a slice of bread and you have a complete vegan protein and a serving of vegetables! That’s the EASY part.
Here’s some advice, if you want to serve braised lentils at the center of a fancy dinner.
- Include a secondary vegetable. I like a fresh green salad, which contrasts nicely with earthy lentils.
- Rustic sourdough bread is perfect for dipping in braised lentils.
- Instead of stirring the greens directly into the lentils, quickly sautรฉ them on the side, then serve as a topping with a few curls of Parmesan cheese. (When it comes to fancy food, how it looks is as important as how it tastes).
- If you have small bowls that will fit nicely on a dinner plate, then you can serve in a bowl. Otherwise, it’s fine to serve it directly on the plate. It is thick enough that it won’t spread too far.
